I don't know about correct but I have always placed them so the metal sides are facing front to back on the assumption that front to back is the direction of the strongest forces acting upon the mounts.

I don't think I've ever seen a diesel engine mount. How do they differ from petrol mounts?
Either way, the strongest forces acting on the mounts would be from torque, which would try to twist the engine about the crank centerline. Front/back forces would be very minimal.

I installed my diesel mounts with the "U" on the bottom and oriented to prevent the engine from sliding forward into the radiator (under braking or extreme off-road conditions) if the mount had failed/debonded.
