Rebuild Temp?Oil Gauge in 2.6L with Weslake Head

What would the proper temp for this motor be, in normal conditions?

What temp would you shutdown?

Opening temp of the thermostat is 161-170F and is fully open at 190F (GB) - would say 175-195 would be normal operating and the best I could find for max is 215F (on Australian Land Rover Owners so not NADA 2.6)
