I am preparing to replace my current suspension in my 1970 88. I use this vehicle as a mobile bar and between the draft system and the kegs, I regularly carry up to 500lbs in the back. I assume that with the added weight I should not go with parabolic springs and am planning to go with stock springs and shocks, but would like additional opinions on what others would use for this application. Thank you!

I believe Land Rover has (or had) additional leaves one could add to the spring stack. I think that's all you'd need. one of the more knowledgeable ones on here will eventually check in and comment.
one can also get a brand X air bag addition for the rear end though a faster fix, a couple extra leaves is less problematic. -
