Temp and Pressure?

Now that it is running (2.25L 1960 Series 2 SWB) can anyone tell me what the proper engine temperature and oil pressure should be.

If it helps, my stats are... (also 2.25L Petrol SWB 1966)

Oil Pressure:
~40 (idle)
~75/80 (at speed)

Water Temp:
~175 deg... with summer (74c) thermostat
~190 deg... with winter (82c) thermostat
