I decided to try my door locks (1973 SIII) this weekend. I can't for the life of me get them to stay locked all three of them. I tried with the key no luck the lever would move up but when I lifted the outside handle the door would open. I then did it with the lever on the assembly, same results. Is there something I'm missing here, it seems strange that all three doors act the same?

It sounds to me like you haven't got them latched all the way. Yup, you may be slamming those doors with all your might but they are only half way latched if I'm correct.
You might want to start by adding some 3 in 1 oil to all the lock connections. If that doesn't do it then the catch posts might need to be adjusted.
